Linking to MIDI Controllers

A couple of questions:
(1) By default, generic linking uses hold. How do I set up latching generic links?

(2) I would like to be able to use the same knobs for controlling different parameters in the same plugin. How do I make it so MIDI data is transmitted on a specific MIDI channel?

(3) Can I transfer local mappings from one project to another?
