Recording indeterminate length?

So, if you're starting a project, or even any time, how do you record a project of indeterminate length. Usually it wants to record to pattern length, then either lets you overdub or not, depending on your setting for overdub.

I've taken to highlighting a "sufficiently long" (how do you know how long you'll want if you're just jamming?) segment of timeline, but this seems like a clunky workaround.

How do you record a segment of indeterminate length to a pattern?

Thanks!
