Pads and stabs

Two questions from a newbi.

What's the difference between stabs and pads? I also have an impression that people equal stabs to synth??

When do I know a pad/stab being pitch-shifted too much? Sometimes I am concerned that my ears being tuned by my over-stretched pads and can't tell the un-naturalness in the sounds.
