Ahhh, I think I know what's happened.

Head into the following path:

/Users/<username>/Library/Preferences/Image-Line and delete these two files:
Settings.txt
Software\Image-Line\FL Studio 12

Yes, that last one really is a file. You may also need to use Get Information in your user's directory to show the hidden Library directory.

After those two files have gone, restart FL - your Piano Roll should come back.
