Muting Multiple Channels at the same time

Hello everybody,

i want to use a reference track for mixing my beats.
1. Thats why i would like to know how i can mute all channels at the same time exept for the channel for the refernce tracks and vice versa.
2.And how can i mute all insert effects or all send effects at the same time.
3. When i press Strg+Z than i can just go back 1 step. How can i go back more than 1 step? It doesnt work when i press multiple times Strg+Z.
