M1 Max 64GB of Ram VS 5950X 64gb of ram

Quick question before my buyer remorse expires, what would handle lots of omnisphere plugins better and izotope plugins better? I will also be doing absolutely no gaming at all, just video/photo editing and maybe getting into 3d rendering, any suggestions? Thanks in advance.
I'm not gonna lie I got a 5950x and a rtx 3080 (exchanged the 3070 ti in the pic) sitting in there boxes because I'm not sure what to do, also a MacBook draw less power, just not sure if I undervolt my pc parts if it's going to hinder performance, I've been driving my head insane just looking at countless of YouTube videos and forum some do omnisphere benchmarks but it's like 10 on the m1 max and I saw this other video that was using 150 omnispheres but only hitting one note each lol pointless, I haven't opened the boxes because I don't want a hard time on my return.
