How do I keep all channel rack sounds separate?

For example, I create a sound from the packs (-> instruments -> orchestral -> strings) and make a sound I like in the piano roll and then label it 'strings' on the channel rack. Then I go to the snare already labeled on the channel rack and start making a pattern there. But it combines the two sounds as I create it when I would rather keep them separate (so I can put them together the way I see fit on the playlist). For example, when I have my 'strings' sounds on the channel rack, I also want to make this my pattern one. Then, when I make my 'snare' sound on the channel rack, I want to make this my pattern two on the playlist. So I can introduce the sounds with each other the way I see fit. Rather than them overlapping with one another as I create them.

Thank you for reading and I really hope I made this clear. I am extremely new to making music and I apologize for my noob-ness.
