3 Note Triad Melody changes the minor/major when adding more notes or continuing the melody structure.

hello i dont know music theory much but i do know very little. but i just want to make sure is fl correct ? when it comes to reading what scale im in and etc.

i wanted to play in for example. E Minor, B Minor, Cmajor, c minor etc all the letters. but when i start a 3 note triad of minor or major as im continuing to make a progression it suddenly changes completly and i get soooooo confused. when i have a complex melody how do i also figure out where i started at using the 3 notes first ? when notes get sooo crowded with more than 3. i havent found an answer anywhere.
