Record long audio on demand?

So I play live mode a fair bit and will regularly do sessions of an hour or more.

I want a nice simple way to record the master for that amount of time (so to disk, obviously and so that rules out Edison). But...I don't want to have to stop playing to set up the recording and start again. If it's going well, I just wanna hit 'record'.

So, does anyone have any suggestions how I can do this?
