Why isnt Mixer blank when starting new Projects?

Somehow it seems the old settings for my previous project is still there when I start a new.

And I can't find a function that allows me to reset the Mixer settings.

This is the same with the default instrument in the Step Sequencer when you start a new project, how do you change them?

Can anyone help me with this?
