Callstack:
please make sure FL Studio has the permission to access the Documents folder:
Open Systemsettings> Security&Privacy> Privacy> Files and Folders> "Documents Folder" and set a mark at (or add) FL Studio.
Then delete the Auto saved.ncp file from the location:
"/Users/(Your Username)/Documents/Image-Line/FL Studio/Settings/Note color presets/Auto saved.ncp" and start FL Studio.

Else, try without opening FL Studio and navigate to
Finder> Applications> FL Studio.app right-click & select "Show package contents">
Contents> Resources> FL> System> Tools> Diagnostics> open fldiagnostic and start Troubleshooting (Reset DPI scaling)

Also, since you are using an Apple M1 device, please have a look at this article in the Knowledge Base and follow the instructions to switch to Rosetta mode:
FL Studio Apple Silicon Computer Compatibility / ARM Support / M1/M2 Chip
This is necessary due to most of the 3rd party plugins not being Silicon ready/compatible
and gaining microphone & documents access permission in macOS.
After switching, please rescan your plugins in Plugin Manager.
Use the following settings:
• Verify plugins
• Rescan previously verified plugins
• Rescan plugins with errors.
• disable/uncheck "Combine VST and VST3 versions of a plugin"
Please remember to rescan the Plugin Manager, every time after switching between Rosetta<>Silicon mode or installing new plugins!
(this is neccessary to identify the plugins for the mode - Intel/Silicon- native).
